Yes another excess of limes, and another lime recipe. :) I found this recipe on My Baking Addiction website and it looked simple and yummy. And they were!! They were soft and chewy, not too sweet with that slight hint of tang from the limes...mmm, yes, another recipe of cookies that my BF approved of, and all the coworkers too! :)
Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1/2 teaspoon vanilla extract
Zest of one large lime, finely minced
3 tbsp lime juice
½ cup unsweetened toasted coconut
1/2 cup sugar for rolling cookies
Directions
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
Using a mixer, beat together the butter and sugar until smooth and very fluffy.
Beat in egg, vanilla extract, lime juice and lime zest.
Gradually blend in the dry ingredients and toasted coconut (I skipped on the coconut, I wanted it au natural lime cookies!! :D)
Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart.
Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
Let stand on cookie sheet two minutes before removing to cool on wire racks.

Kyra's First Birthday!
Yes, sorry I've been on a hiatus from blogging. I have no excuse really. :) I've been thinking a lot of starting a website, and it's all in my head now, just need to execute. That way, it's easier for people to see of a list of things I bake and photos of all the things I've baked. I just need to get over my computer illiterate hump and figure it out!!!
Onto Kyra's first Birthday, last weekend, one of my dear friend's daughter turned one..I can't believe time passes so fast!! She is the cutest thing ever, 1/4 Chinese, 1/4 Vietnamese and 1/2 Indian..what a combination!! :) I feel bad for the daddy when she grows up!! haha. And that, ladies and gentlemen, is why I do NOT want a daughter! I'm sure I just jinxed myself. haha.
My friend J wanted a simple dessert table. There was a hot pink theme, and the photo invitation had some orange, butterflies and flowers:
I really like the desserts to match or have some kind of theme/cohesiveness..so I like to work off the invitations..so hot pink desserts with hints of orange and butterflies! :)
Red velvet cake pops with fondant butterflies, "K" for Kyra and "1":
Some snickerdoodle cookies:
some double chocolate chip cookies:
and some requested lemon glazed lemon cookies by J:
Chocolate cupcakes w/chocolate buttercream with fondant toppers:
and a smash cake for the birthday girl in form of a big cupcake!! :)
(the bottom "cupcake wrapper" part is all chocolate :D) Even though Kyra was kind of scared of the big cupcake (smashing not so successful haha), it was a great time with great food and people!
